Stevia-Sweet Biscotti

  • 1 cup All Purpose Flour
  • 12 packets Lantic Rogers Stevia
  • 1/4 cup Unsalted Butter
  • 1 Egg
  • 3/8 teaspoon Baking Powder
  • 1/8 teaspoon Salt
  • 3 tablespoon Walnut Pieces
  • 1/4 teaspoon Vanilla Extract


  1. Preheat the oven to 350 °F (175°C). Line two baking sheets with parchment paper.
  2. Beat butter first, and then add Lantic Rogers Stevia. Continue to beat until light and fluffy.
  3. Add the egg (at room temperature). Mix until just combined. Add vanilla extract
  4. In another bowl, sift together the flour, baking powder and salt. Add walnut.
  5. Add dry ingredients to the egg mixture. Stir with a spoon and as the dough comes together, knead by hand.
  6. Roll the dough into a log about 15 inches long. Place logs onto cookie sheets. Flatten the logs out until they are about 3 inches wide with a slight hump going down the middle.
  7. Bake for 25 minutes in the preheated oven or until firm. Remove the loaves from oven and let them cool.
  8. Decrease oven temperature to 325F (163C).
  9. Cut the loaves into diagonal slices 1/2 inch wide, place the slices onto the cookie sheets and return to the oven.
  10. Toast on one side for about 10 minutes, and then turn them over to bake the other side for about 10 minutes.
  11. Remove from oven and place on a wire rack to cool for 15 minutes before serving.
